Chef Matt Gallaher has created another feast “fabuloso” using fruits of the Mediterranean sea and local seasonal produce in the Spanish tradition. Wine pairings from countries in the Iberian peninsula region have been selected by Sommelier Connor Coffey. Hays Gardens, set along the banks of Fort Loudon Lake, features waterfalls cascading from the towering marble formations. Woodland gardens and a fenced cottage garden featuring roses, perennials, shrubs, and annuals provide fragrance through the growing season. The Moon Garden faces west and allows the white flowers to catch the light of the moon over the lake…..a delightful place for dessert at the end of a divine dinner.
